  4. Back to baking for 15 mins till it looks crispy golden. Turn off the oven and allow it to cool inside for a more crisper taste.

If using canned chickpeas, open the can, drain it in a colander, rinse it with water. Dab the chickpeas with a clean kitchen towel or paper towel. Put a few layers of paper towels on your work surface. Strain and rinse the chickpeas in a colander, then shake off as much water as possible. (Skins can also be "pinched" off by squeezing a chickpea between forefinger and thumb.) Dry the chickpeas on a towel and transfer to a rimmed, parchment-lined baking sheet.
